I hold a PhD in Cell Biology and Genetics from the Autonomous University of Madrid. She is
Principal Investigator of the Nutritional Control of the Epigenome Group at IMDEA Alimentación.
Her studies focus on the field of nutrigenomics, studying the impact of nutrients on the
regulation of gene expression and epigenetic mechanisms related to cardiovascular disease
and obesity. I have studied the role of cholesterol as a regulator of gene expression and the
impact of nutrients such as fatty acids and TMAO on the expression levels of microRNAs.
In nutritional intervention trials, she has studied the effect of beer consumption, extra virgin
olive oil, the Mediterranean diet or ultra-processed foods on epigenetic mechanisms such
as DNA methylation and microRNAs and their impact on ageing. She has also developed
interesting nutritional epidemiology studies to determine the association of the consumption of
nutrients such as choline and betaine or polyamines and ultra-processed foods with markers of cardiometabolic risk, liver and kidney disease. I am principal investigator of the prestigious
PREDIMED-Plus study and the ENSATI study (https://ensati.wixsite.com/ensati).
I have published more than 150 articles in high impact journals such as JAMA, Diabetes
Care, EMBO Molecular Medicine, AJCN or MNFR, among others, and her work has
been cited more than 3000 times (h-index = 30). I actively collaborates with national
(CIBERobn) and international consortia such as DIMENSION, ELSA-Brasil, GeroScience Task
Force, STRENTEX, EIT-Food Healthy Aging Think and Do Tank, AtheroNET COST and
SENESCENCE2030 COST. I have received funding from national public entities, such as the
Instituto de Salud Carlos III and the Ministry of Innovation and Science, and European ones,
such as EIT-Food or ERA-HDHL, as well as from private entities. I am also a member of the
panel of experts for the evaluation of projects of the State Research Agency, the European
Cooperation in Science and Technology (COST) Agency and the Science Fund of the Republic
of Serbia. i am meber of American Society of Nutrition, Spanish Society of Nutrition and Spanish
Society of Atherosclerosis.
My reseacrh team includes researchers from the fields of biology, nutrition and bioinformatics
with the collaboration of doctors and nurses from primary care centres and hospitals.
I carry out an intense educational activity (associate professor at the CEU San Pablo
University), dissemination and communication, develping teaching and dissemination material
and the presence in the media and publication of articles in The Conversation.
I have supervised more than 15 final degree/master's degree projects and has supervised 2
doctoral theses, with 4 more currently being supervised.
In the field of transfer, I work on the development of new algorithms that apply novel methods of
machine learning and artificial intelligence analysis. She is currently in the process of protecting
an algorithm for the characterisation of glucotypes that has been selected by the DeepTech
Madrid programme for its innovative and entrepreneurial potential. I am CEO of the technologybased
start-up Food-i Sense Analytics and is actively involved in the entrepreneurial ecosystem
of the Madrid Region (UAM emprende and DeepTech Madrid) and nationally (Science for
Industry).
